We were drawn to your accordionist, as Cindy (it's her birthday tomorrow) loves and would like to learn to play the accordion. We also have been hankering after falafels and did we have a DELICIOUS ONE and SPINACH PIE tonight. The ambiance was PERFECTO. Small town Americana and Old European... LOVE it! Many thanks for the memories and hope to see you again.

- Donna and George, Meadow Vista

Our visit, after a long recording session cutting a CD, felt like coming to visit family - the food fed and the atmosphere relaxed. Reminded us of the 'Sheepherders' Inn' in Los Banos.

What is a Mediterranean diet?

The "Mediterranean diet" is based on the cuisine of Spain, southern Italy, southern France, Greece, and parts of the Middle East. Some of the main foods in this diet include olive oil, legumes like chickpeas (aka "garbanzo beans"), unrefined grains like brown rice or quinoa, fresh vegetables, lean dairy, especially yogurt and light cheeses like feta, just a little meat, and a moderate amount of red wine. Nutritional experts agree that olive oil contains a very high level of monounsaturated fats, most notably oleic acid, which may be linked to a reduction in coronary heart disease risk. Evidence suggests that the antioxidants in olive oil improve cholesterol regulation and LDL cholesterol reduction, and that it has other anti-inflammatory and anti-hypertensive effects.

Come into the Greek Bistro in Colfax, CA to try the Mediterranean diet firsthand!

What is baklava?

Baklava is a sweet pastry made of layers of filo pastry filled with chopped nuts and sweetened with syrup or honey. Baklava is a delicious treat of Turkish origin, which is now popular throughout the Middle-East and the Mediterranean.

What is falafel?

Technically, falafel is a Middle Eastern dish of spiced, mashed chickpeas formed into balls and deep-fried. Falafel is usually served in a pita and drizzled with tahini-based sauces. Many believe the dish was first introduced in Egypt, but it is now popular throughout the Middle East  and the Mediterranean as a snack or a replacement for meat.

Restaurant, Food, Gyro's!...

Did you know you can have fresh Gyros in Colfax, Ca.?

Yes you can!...Colfax Greek Bistro serves Gyros for I-80 travelers who are hungry,  and want food that is healthy, fresh and affordable without having to go too far off I-80. Fast food is convenient, but how about 'healthy food' that is convenient?

The Gyros are authentic and are roasted on the premises - just the way they have them in San Jose, Santa Cruz and Germany! If you don't eat meat, then the Gluten - free or non dairy options are easy to accomodate by the owner, cook and hostess, Elan Vitkoff.

The Salads from Around the World are healthy for the Vegetarian and the other savory vegetarian options are the delicious Dolmas with Tzatziki sauce that are served warm and finally, the Falafels that are served on warm pita bread with tangy Tahini sauce. If you want healthy food off I-80, midwary from Reno to Sacramento, then stop in Colfax, Ca. on the 4 days that we are open which are Th. thru Sunday.
